Blackberry Peach Pie
Did you know blackberries are not really berries? They are an aggregate fruit. Strawberries and raspberries are also aggregate fruits. They grow from a single flower with more than one ovary. That’s the official definition of aggregate fruit. TRUE berries grow from a single flower with one ovary and typically have several seeds. That makes tomatoes a berry. Which means pomegranates, kiwis, and---sit down for this one---bananas are berries, too. Who knew? You ARE following this, right?
According to these experts (the same people who declared that blackberries are not berries), my blackberry bushes need full sun and plenty of room to grow. Since I’m far from an expert and failed to consult one when I stuck these babies in the ground years ago, I planted mine under a pine tree, squeezed into a two-foot bed running along a fence. They are growing through the fence, they’ve mingled among some grape vines, and a ‘new Dawn’ rose, and have recently decided to extend their territory, moseying into the space claimed by the fig tree. Fig is calmly sharing her space with these out-of-control vines for now, but I can tell, her patience is waning.
For the first time in the 15+years I’ve had blackberries (that aren’t berries, I’m having a hard time wrapping my head around this), I was able to pick enough for a pie-- or a cobbler or a crisp or a crumble or a buckle.
Maybe I’ll just make muffins.
Blackberry Peach Pie
4 cups blackberries
2 ripe peaches
1/2 c sugar (or more)
a bit of cinnamon, a pinch of salt
5 T cornstarch
Mix all together and put in a pieshell..either your own or the grocery store's...I'm lazy. Guess which I chose?
crumb topping
sugar, flour, butter...crumbled together and sprinkle on top
Bake at 400 degrees for about 40 minutes or until it bubbles and browns.
Ice cream on top makes it pretty decadent...turning it from a pie into more of a cobber or a crisp. No matter what you call it, it's yours and it came from your garden! So you are going to love it.
